I originally made this recipe as peanut butter cups, but I found that everything melted so nicely together that they might work as meltaways. And they did!
Here is the recipe.
Chocolate Peanut Butter Meltaways
(Modified from I Quit Sugar)
1/4 Cup Cacao Butter
1/4 Cup Coconut Oil
1/4 Cup Cacao Powder
5 drops Stevia
1 Tbsp Brown Rice Syrup
3 Tbsp. PB
Heat butter and oil until melted (very gently over a double boiler.) Add peanut butter and brown rice syrup until well blended. Add cocoa powder. Pour into measuring cup for easy pour. You may have to stir every once in a while while you pour to keep the mixture emulsified.
Makes a dozen mini muffin sized meltaways. Store in the refrigerator or they will melt!
